Every now and then we make fowl Divan out of turkey or chicken. Not so sure about the taters on top but without, it is always good. Actually I don't even top the traditional Shepherds pie with taters.

LOL. The blogs I have been following are into chicken, turkey and pumpkin lately. Oh, and curry.

Here's something different: Sweet Butternut Squash Casserole.

Never cared for squash or cushaw.

But tonight we are having Asparagus casserole as a meal for dinner.
Asparagus Casserole
2 cans asparagus spears , drained, reserving ¼ cup of the liquid 1 can cream of mushroom soup
¼ cup half and half or whole milk
6 hard-boiled eggs, peeled and sliced
2 cups cheddar cheese, freshly grated
2 tablespoons butter, cut into 5 or 6 small pieces
1 small container French fried onions (or you can use cracker crumbs)
Preheat oven to 350. Place asparagus spears in the bottom of a lightly greased casserole dish. Layer egg slices on top of asparagus.
In a separate bowl, mix together cream of mushroom soup, reserved liquid and half and half. Pour on top of asparagus and eggs.
Top with cheese and then pats of butter (I KNOW!). Bake for 25 minutes, then add French fried onions and bake for 10 more minutes.
Serve with steak, pork or chicken. Watch fat settle in thigh area. Then refuse to care. Because OH, it is delicious.
Deeeee-licious!

That sounds good. Have you ever tried making it with fresh Asparagus? Don't really like the texture of canned.

We did and thought it not as good. If one had truly tender fresh it might be fine. That is really hard to find unless you grow it.

For 2 as a side dish or meal with salad you may want to cut it in half.

We had sweet and sour stir fry over the weekend. Found a package of pork already cut marked down to $1.50.

Might snow here this evening so a hamburger casserole is on the menu for this evening.
