Those chops do look interesting.

For the most part we've determined that I never bought the right part of the pig. Undoubtedly the pork butt (shoulder) is the most flavorful and versatile chunk of the pig.

Yesterday I made pork stew. 1.5 pounds of shoulder cut into cubes, seared and slow cooked with onion, carrots and taters. Melt in your mouth goodness and the meat was only 99 cents a pound.

We get whatever boneless pork chops are the cheapest the day we go shopping.

Your stew sounds great! We have a slow cooker but are not organized enough to take the meat out day/night before unless it's shopping day and purposely buy the meat for a slow cooker dish.

This was all done stove top. But after searing the slow cooking might be done in a crockpot.

Most times i do manage to defrost the meat overnight. Sometimes I forget and that is where the microwave at 40-50% power for 2-4 minutes per side does the defrost. IMO, the defrost program on most MW go to high a power and ruin the meat. You have to learn waht works best for your unit but after that you can do a quick defrost with no cooking and ruining the meat.

I find defrost in the microwave ruins the meat also.

Sometimes if we are a bit late we put it in a dish of room temperature water but apparently you are not supposed to do that.... Mom did it all the time!

Have you every tried making trifle? Mom makes it on special occasions.

This reminded me of this great dessert: Easy Layered Berry Trifle Recipe

Mom makes it a bit differently:
  • Layer of sponge cake cut in slices with some sherry poured over.
  • Layer of fruit (currently on a raspberry or blueberry kick but used to use fruit cocktail)
  • Pour jello over and let set
  • Layer of custard (make the thick version)
  • Layer of whipped cream
  • Sprinkles for decoration
We tried making a black forest cake version with chocolate sponge cake and chocolate pudding instead of custard. Turned out ok but a bit on the sweet side. We have tried doing a peach version also.

I've gone as far as using the Irresistibles "Buttery Taste Margarine". DW still uses unsalted butter sticks for bakery cooking - but for toast, heated rolls, garlic bread - I use the margarine.

I saw a video on how to make Ghee. It's not that hard. Just need some patience.

I saw a good sized jar of it in the grocery store for $27.00.
