This reminded we have done this before (but with peppers, broccoli and onions) Oven Roasted Vegetables for Fall It doesn't take long to do.

Tonight is left overs from last night. Chicken in sauce made with cream of mushroom and cream of chicken soups and a can of mushrooms over pasta. Original recipe called for broccoli in there too but we didn't have any.

I sometimes get salmon pieces from Metro. I get the BBQ version over the wine and herb. We also add more Dianne bbq sauce in the final cooking stage for added flavour. However, I'd wager the stores in Accrete's area have fresher salmon. ;)

Probably. We are right on the coast so you could actually do down to the docks to get some if you wanted to.

Ok, you guys probably have never had this: Parsnips
...The parsnip, Pastinaca sativa, is a vegetable closely related to carrots and parsley, all members of the Umbellifer family.

Like beets, as well as turnips and other Brassicas, they actually get sweeter after the arrival of a winter frost...
Health Benefits of Parsnips

Mom makes parsnips but probably not considered the healthy way... She dips the pieces in oil and roasts them like roasted potatoes.

Actually I think I tried it once. For sure I've heard of it. I never cared for beets, turnips or the parsnips, just did not like the flavor.
