Have to look up how to make chicken cordon blue for next weekend. Seem to remember it is a bit time consuming. Mom cheats and buys from the butcher already assembled but I'm not driving an hour to go pick up. Hmm that butcher has some frozen in his freezer. Will have to try and figure out if another butcher closer to me has them....

Our local butcher store has some prepared meals. We've tried two of their offerings, and both options were not only good tasting, but also economical. The one I that I do remember, had 4 servings of a breaded chicken on top of a squiggly pasta - kind of like egg noodles, but smaller. Anyhow, although they were not huge portions, and not heavily breaded either, with a vegetable, it fed 3 adults comfortably. Not bad for $3.66 per person. I think they were on sale, so, even if the regular price is $4 or $5 per person, it's still a good buy. If the other meal comes to mind, I'll post back here.

So, this pandemic hasn't been a total loss, since the COVID thing nudged us in the direction of discovering the local butcher's quality of meat and other offerings as well. ;)

No it hasn't.

Got those who eat out all the time (or a lot) to realize how much money they were spending on restaurant/fast food - if they didn't substitute delivery. ;)

Those who don't go out much (other than special occasions) wouldn't have seen much of a difference in their food habits but probably an increase in the grocery bill. I know our regular grocery store has put ground beef up to $7/500g (which would now be $7 for just over a lb). They use to be $3.99/lb. Maybe $3.50/lb on sale. :(

I think last time I was with Mom when she bought prepared chicken cordon blue it was $4.50 each. No sauce though. Just the meat.

After reading the recipe I can't imagine that there would be many variations.

I do think portion controlled breasts might yield a more consistent cook than the grocery store kind but you can make your own PC breasts with a steady hand and sharp knife.

I "gave in" yesterday and ordered takeout. Today, we've got these humungous chicken breasts (from the local Meat Merchant) and will probably have to find a recipe to oven-bake them. When meat is that thick, it's not easy to bbq properly getting the inside part cooked, without drying out the outside part.
