On a mission to find a salad or side dish that does not have mayo (or any other fattening sauce) so it's in the fridge/freezer ready to go.

Have you guys ever had cooked red cabbage as a side dish? Mom makes it and freezes in marg containers for special dinners so it's one less thing to make on the day.

Never red. I do boiled or roasted green. That would not be the best warmed up.

Tomatoes or well rinsed green beans right from the can make a decent salad.

I make a clone of Rafferty's Hot bacon salad dressing that is fairly low fat but it is only good fresh.

For dinner tomorrow I am making something new, Carnitas (Mexican Slow Cooked Pulled Pork) from what I believe to be an authentic recipe I found here: https://www.recipetineats.com/pork-carn ... lled-pork/

I'm going to make a small batch first and make them into burritos using green chilies and not the jalapenos. We all seem to like stuff with the milder heat.

They just sound delicious.

I've made pulled pork from Boston butt many times and it is always good. I've come to prefer the oven method as the shrinkage is less than a crock-pot. The hot skillet after the cooking is the element that I suspects really make the flavors pop.
