Corn Salad

We make a version of this with:
-frozen corn
-Edamame Soy Beans
-diced red pepper
-diced red onion

You are supposed to put Italian dressing on it but we leave the dressing off so it keeps better in the fridge and add when served.

Started to make banana pudding to go with that chicken. The Nilla wafer mouse must have eaten my horde. So I made banana pudding pie in an on-hand, premade shortbread crust (like graham only shortbread). It was edible but not as sweet as the one with the layered wafers. Those little cookies must be loaded with sugar.

Yesterday we had herb cheese stuffed tortellini with tinned spaghetti sauce. We added browned hamburger and a tin of mushroom pieces.

Enough for dinner today also.

We had salmon cooked in bbq sauce, with rice last night. I diced and fried the onions in a bit of avocado oil, garlic powder and paprika. The salmon was pan fried in a bit of avocado oil and Bullseye bbq sauce.

There was a sale on salmon at Longos a few days ago, so I had to get in on it, as our household is getting tired of Beef, Pork, Chicken, Beef, Pork, Chicken....

Have no idea what to do for din tonight. We had beef (burgers) last night, so I guess it's chicken. Gotta get to the freezer asap!

The mood I'm in right now means we may be carrying something in. I had to replace some washers on some really cheap lavatory supply stops and getting to them and apart without breaking something was a challenge. Now I can turn that off and the rest of the house has water.

I just know I'm going to break something and wind up replacing the faucet.
