For the stir fry, I find that the marinating part can be done just before cooking the chicken, but it is suggested the chicken is cut up in small pieces and marinated in the fridge in teriyaki sauce for at least one hour.
What we did the last time (not sure if I mentioned it) was to stir fry the vegies to soften them up, add the bean sprouts near the end, but adding a bit of teriyaki as you go. I pan fried the chicken servings (white flattened breast) in a separate pan with some avocado oil to brown then a bit, then the rest of the time in teriyaki sauce till browned even further.
It was a good cooking mod to the regular way I've mentioned how we've done this meal previously.

Here are some stats I ran across. How it got started I do not know.
A 1000 pound slaughter steer turns into 610 pounds hanging weight and that yields about 430 pound of cryo packed beef. A 57% loss of live weight.
Now this is the kicker. For all of 2020 live beef is selling well below the 5 year average per hundredweight and only in Jan and early June did it sell at 2019 prices. The remainder of 2020 was well below 2019 prices. National average price per live hundredweight June 12, 2020 for slaughter steers was $104.84*. A 1000 pound steer = 1048.40 cost. Meat cost 1048.40/430= $2.43 a pound + processing, delivery and local preparation charges.
Ground beef in the store 4.99 a pound and they are advertising it.
So why is beef so d*&%$# expensive in the grocery? Are we being had?

Grocery store finally had lean ground beef in tubes yesterday. It was $17.83 for about 3lbs. If on sale it is about $3.99 per lb.
Asked a friend about canned chicken. She hasn't had it for years but got it from Costco in a can the size of a pop can. She found this: Three Easy Meals You Can Make With Canned Chicken. When I looked all I saw was cans the size of a tuna can.
Made chicken enchiladas from scratch yesterday. Put half in the freezer for another day. We had the recipe from years ago when we decided to have a Mexican dinner party.
Been craving bagel with cream cheese from Timmy's so got some bagels and strawberry cream cheese while grocery shopping yesterday.

In normal times here, the canned chicken comes in 2 sizes, 5-6oz tuna size and one that is 10-12 oz. About the only place to find the large cans is at Costco or Sams. In the past I recall seeing it in can about half of a tomato juice can but no one seems to have that now. One local grocery seems to have plenty of the 10-12 ounce size, 2-3$ depending on the brand.
Hang on for the beef if you can. I'm seeing some softening of the wholesale prices at that local place I mentioned a few posts back. Also the USDA is reporting increased volume of slaughter beef at lower prices. The supply chain should react if they can process the meat.
