Tater soup with canned taters might work but since you have to cut them to the mussy stage I would only do it in a pinch.

I do keep them around for rainy days.

Well rinsed and cut up right of the can they are my first choice for tater salad. They are perfectly cooked for that. I also sometimes mix them with a couple of cans of green beans and heat, mostly because new taters can not always be found and it is far quicker.

Tried something different last night. I used my Easy Red Beans and rice recipe and made it with ground beef instead of smoked sausage. It wasn't great but it wasn't bad.

I've found that ground beef, when added to recipes that require pieces or strips of beef (or pieces of chicken for that matter) are Ok, but not great. One example is flat egg noodles and beef - great with strips of beef, but not ground beef. Tried it once with ground beef, not bad, but I'd rather a ground beef mix with rice. ¯\_(ツ)_/¯

True. I once tried making soup with ground beef and was not at all happy with the result. It does work for Shepard's pie that has a lot of the same stuff but less liquid.

I just remembered a coworker gave me this recipe:

1 bottle of Kraft Russian dressing
1 package of Knorrs Onion soup
Pork chops

Put the chops in a casserole.
Pour the Russian dressing and soup mix over them.
Bake for about an hour at 350.

That has to be good. Rice with that should great.

It was good. I found it a bit rich for only 2 pork chops but maybe it's not so rich with a few more.
