When I worked for a brick and mortar business and had to calculate shipping costs we knew how much the order would weigh and had a rate chart from the shipping company to use.
The ecommerce software I have seen you have to pick one of the following methods for the whole
- price per item
- price per dollar value of the order
- price based on weight
This seems like it would be very daunting for the ecommerce site owner to figure out the best method (especially if this is their first business) in which they would not loose money overall.
There is a risk of loosing money on some items in your store no matter which if the above methods you choose.
How have you decided to price your shipping costs to the customer?
Have you found an ecommerce software package where you can have more than 1 type method of costing shipping costs in the same ecommerce site?

That's about how far I went with Shopify. I think your control over shipping also depends on which plan you choose. Other platforms, I'm sure, are similar.
